Hachi Matcha Shincha: Comes from the rolling hills of Uji, Kyoto, Japan. Ichibancha, is the first picked tea of the year. Similar to the Beaujolais Nouveau of French wine, the name Shincha celebrates the first tea harvest of the year. Matcha is usually not ground immediately after harvest, instead, it is “rested” for a period of many months to mature. Shincha is the opposite, it’s ground as soon as possible after it has been picked, steamed, dried, de-veined and de-stemmed.

Hachi Matcha Shincha Tasting Notes for 2022:
Our 2022 Shincha Matcha has a very deep flavour, lots of Umami with vegetal undertones and a metallic finish that just goes on and on, leveling out into a mild dryness on the tongue.
First tasting: Somewhat thin mouth feel but not unpleasant with a taste that hits right away and then changes and lingers on the tongue developing and deepening over time. Heavy umami with none of the effervescence of previous years; this matcha is more complex and demanding of attention.
Second tasting: Reveals more of the metallic, almost iron centric, flavour along with the deep umami. The dryness on the tongue continues long after the initial tasting.
Final tasting: As the beverage cools, the umami really stands out, as does a new vegetal sweetness that arrives and lingers just long enough before the dry finish takes over.
The complexity of the 2022 Shincha is surprising yet undeniable. To give a wine analogy, more like a Cabernet Sauvignon in complexity but with the thin mouth feel of a Pinot Noir.

Preparation of Traditional Matcha: Sift 1/2-1 teaspoon of Hachi Matcha Shincha into a small bowl. Add 2-4 ounces of 70-80 degree Celsius water (boiling water will compromise taste and nutritional content). Whisk vigorously using a traditional bamboo whisk or a frother for 15 seconds or until creamy. Enjoy your perfect cup of Matcha!
Preparation of 8 ounce Matcha Latte: Whisk 1 teaspoon of sifted Matcha with 1 ounce of 80 degree Celsius water. Add steamed milk and enjoy.
Storage: Keep away from heat, light, air, moisture and strong odours. Once opened, use as soon as possible.
