Hachi Matcha Shincha: Comes from the rolling hills of Uji, Kyoto, Japan. Ichibancha, is the first picked tea of the year. Similar to the Beaujolais Nouveau of French wine, the name Shincha celebrates the first tea harvest of the year. Matcha is usually not ground immediately after harvest, instead, it is “rested” for a period of many months to mature. Shincha is the opposite, it’s ground as soon as possible after it has been picked, steamed, dried, de-veined and de-stemmed. 

Just Matcha has been importing Shincha Matcha for over 10 years now; it is slightly different and excellent. The fresh, complex aroma and taste will blow your mind. This limited edition Matcha goes quickly and once it's gone, we have to wait another year. See what the buzz is all about. You will not be disappointed. 

Hachi Matcha Shincha Tasting Notes for 2024:

Release.  When water was poured onto the sifted matcha, the release was that of mils cocoa, like when you open a fresh bag of cocoa powder.  Surprising honestly.

First taste.  Beautiful thick froth.  First is quite vegetal. Not grassy but deeply vegetal, like raw root vegetables, radish without the spicy bite just the underlying earthy flavour.  The flavour lingers on the tongue for a very long time, slowly sweetening as the flavour disappates.

Second taste. A dryness envelops the tongue again with that deep earthy flavour but drier this time. Flavour continues to linger and again with a more dry but sweet finish growing on the tongue.

Third taste. Still a beautiful froth.  A sweeter start with his sip  which moves swiftly to the deep earthy dryness that again disappates to sweet notes around the tongue along with a very mild astringency as though the taste buds have run out ideas.

Fourth taste.  Still an amazing froth to finish with, again with the sweetness and then earth then dry, a lingering dryness that again turns sweet at the end.

Final notes.  This is our 10th year doing shincha and most taste very fresh and light.  2024 though has a maturity of flavour that is very surprising.  There is depth and character here that is not always present in Shincha.  2024 may stand out as a great year for Matcha, especially if the Shincha is indicative of things to come.  Can't wait and I hope you enjoy as much as I did!

 

Region: Uji, Kyoto, Japan

Preparation of Traditional Matcha: Sift 1/2-1 teaspoon of Hachi Matcha Shincha into a small bowl. Add 2-4 ounces of 70-80 degree Celsius water (boiling water will compromise taste and nutritional content). Whisk vigorously using a traditional bamboo whisk or a frother for 15 seconds or until creamy. Enjoy your perfect cup of Matcha!

Preparation of 8 ounce Matcha Latte: Whisk 1 teaspoon of sifted Matcha with 1 ounce of 80 degree Celsius water. Add steamed milk and enjoy.

Storage: Keep away from heat, light, air, moisture and strong odours. Once opened, use as soon as possible.
