Hachi Matcha Shincha: comes from the rolling hills of Uji, Kyoto, Japan. Ichibancha, is the first picked tea of the year. Similar to the Beaujolais Nouveau of French wine, the name Shincha celebrates the first tea harvest of the year. Matcha is usually not ground immediately after harvest, instead, it is “rested” for a period of many months to mature. Shincha is the opposite, it’s ground as soon as possible after it has been picked, steamed, dried, de-veined and de-stemmed.
Just Matcha has been importing Shincha Matcha for 7 years now; it has always been slightly different, and it has always been excellent. The fresh, lively sweet aroma and taste will blow your mind. Preparation of Traditional Matcha: Sift 1/2-1 teaspoon of Hachi Matcha Gold or Shincha into a small bowl. Add 2-4 ounces of 70-80 degree Celsius water (boiling water will compromise taste and nutritional content). Whisk vigorously using a traditional bamboo whisk or a frother for 15 seconds or until creamy. Enjoy your perfect cup of matcha!
Preparation of 8 ounce Matcha Latte: Whisk 1 teaspoon of sifted matcha with 1 ounce of 80 degree Celsius water. Add steamed milk and enjoy.
Storage: Keep away from heat, light, air, moisture and strong odours. Once opened, use as soon as possible.
