This starter kit pairs an easy modern setup with Hachi Matcha Shincha, our limited-edition first-harvest matcha from Uji, Kyoto.

Shincha is made from ichibancha — the first tea picked of the year. Unlike matcha that is rested for months before grinding, Shincha is processed and ground as soon as possible after harvest. Think of it as the Beaujolais Nouveau of matcha: seasonal, lively and a little different every year.

Expect a fresh grassy aroma, deep umami, a velvet mouthfeel and a long, dry finish that keeps developing as the tea cools. It is a wonderfully expressive matcha and, once the season's supply is gone, it is gone until the next harvest.

How to prepare:
Sift ½–1 teaspoon of matcha into a cup or bowl. Add 2–4 oz of water at approximately 70–80°C and froth for about 15 seconds until smooth. We especially recommend trying Shincha straight with water first so you can taste what makes the year's harvest unique.
