Hachi Matcha Shincha comes from the rolling hills of Uji, Kyoto, Japan. Ichibancha, is the first picked tea of the year. Similar to the Beaujolais Nouveau of French wine, the name Shincha celebrates the first tea harvest of the year. Matcha is usually not ground immediately after harvest, instead, it is “rested” for a period of many months to mature. Shincha is the opposite, it’s ground as soon as possible after it has been picked, steamed, dried, de-veined and de-stemmed.

Hachi Matcha Shincha 2022 Tasting Notes
Directions: Sift ½ tsp Hachi Matcha Shincha, add 4oz of 75 degree water and whisk to perfection.
Vegetal, earthy, sweet aroma of fresh sugar snap peas.
First tasting: Initial light delicate mousse and crema with a long, long dry finish that builds initially and slowly drifts away.
Second tasting: Reveals a delicate sweetness while the long dry finish remains. Does not have the young effervescence of previous years, but makes up for it with a finish that just goes on and on.
Third tasting: As the beverage cools, the umami really stands out, sweet savory while the finish remains long and dry.
Final tasting: Brings out more umami but more savory than sweet and the finish while lengthy, develops a minor astringency.

Matcha is green tea that has been shade-grown, de-veined, de-stemmed and ground into a very fine powder. Matcha isn't steeped, it's "eaten." One serving is equivalent to 10 servings of green tea in terms of nutritional value and antioxidant content. Matcha's unique combination of amino acids and caffeine creates a lasting feeling of focused vitality. Perfect for work, play, exercise or meditation.
Preparation of Traditional Matcha: Sift 1/2-1 teaspoon of Hachi Matcha Shincha into a small bowl. Add 2-4 ounces of 70-80 degree Celsius water (boiling water will compromise taste and nutritional content). Whisk vigorously using a traditional bamboo whisk or a frother for 15 seconds or until creamy. Enjoy your perfect cup of matcha!
Preparation of 8 ounce Matcha Latte: Whisk 1 teaspoon of sifted matcha with 1 ounce of 80 degree Celsius water. Add steamed milk and enjoy.
Storage: Keep away from heat, light, air, moisture and strong odours. Once opened, use as soon as possible.
